{"id":1329,"date":"2009-04-26T15:36:17","date_gmt":"2009-04-26T15:36:17","guid":{"rendered":"http:\/\/www.hamzy.net\/blog2\/?p=1329"},"modified":"2009-04-26T15:36:17","modified_gmt":"2009-04-26T15:36:17","slug":"key_lime_curd_eclairs","status":"publish","type":"post","link":"http:\/\/www.hamzy.net\/blog2\/?p=1329","title":{"rendered":"Key Lime Curd Eclairs"},"content":{"rendered":"<div class=\"photo\">\n<img decoding=\"async\" src=\"http:\/\/pictures.hamzy.info\/blog-photo-2N8I7229.JPG\" alt=\"Key Lime Curd\"><\/img>\n<\/div>\n<p>\nI came across a <a href=\"http:\/\/annathered.wordpress.com\/2009\/04\/07\/how-to-make-totoro-cream-puffs\/\">How to make Totoro cream-puffs<\/a> article and got inspired to make eclairs again.\n<\/p>\n<p>\nI used <a href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/lemon-curd-recipe\/index.html\">Alton Brown&#8217;s Lemon Curd<\/a> recipe as a start.  However, as a South Floridian who grew up on Key Lime pie, I used Key Limes instead of Lemons.\n<\/p>\n<blockquote><p>\nPut 5 Egg yolks, with Chalaza removed, into a bowl.<br \/>\nAdd 1 Cup sugar and<br \/>\nWhisk until smooth.<br \/>\nPour in 1\/3 Cup Key Lime juice<br \/>\nand 1 Tablespoon Key Lime zest, finely chopped.<br \/>\nWhisk until smooth.<br \/>\nWhisk over a double broiler for 8 minutes.<br \/>\nRemove from heat, whisk in 1 stick of butter, 1 Tablespoon at a time until melted.<br \/>\nCover with Saran Wrap and refrigerate.\n<\/p><\/blockquote>\n<div class=\"photo\">\n<img decoding=\"async\" src=\"http:\/\/pictures.hamzy.info\/blog-photo-2N8I7280.JPG\" alt=\"Puff pastry before\"><\/img>\n<\/div>\n<div class=\"photo\">\n<img decoding=\"async\" src=\"http:\/\/pictures.hamzy.info\/blog-photo-2N8I7281.JPG\" alt=\"Puff pastry after\"><\/img>\n<\/div>\n<p>\nThe puff pastries came out a little bit deflated.  I wonder if it was because I cooked them on silicone mats?
